You have to slide up or down on the volume bar when you press the volume buttons to increase/decrease the volume. There is no way to change that. Same for the brightness increase/decrease.

Well, you can keep pressing the volume buttons to increase/decrease the volume. One click activates it, when it appears, if you click the volume up/down button again it will increase/decrease the volume. Or you can click the volume button once and then slide up or down to increase/decrease the volume to your liking. When the screen is locked and you have music running you can just click the volume button and it will change the volume.

Yes. The double action is required to prevent accidental changes in volume. Especially while keeping your device in tight jeans, there were issues when users found the volume level changed when they take it out, resulting in missed notifications. Hence the extra step.
